Carnivore Chili with Ground Beef & Bacon

Carnivore Chili

Ingredients
  

  • 1 lb. ground beef 80/20 or fattier
  • 6 slices bacon chopped
  • 1 cup beef bone broth
  • 2 tablespoons butter
  • 2 oz cream cheese or 2 tablespoons heavy cream
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika optional for less strict carnivore
  • ½ teaspoon garlic powder optional
  • ½ teaspoon onion powder optional
  • ¼ teaspoon cayenne pepper optional

Instructions
 

  • In a large pot or skillet over medium heat, cook chopped bacon until crispy. Remove and set aside.
  • Leave about 1–2 tablespoons of bacon fat in the pan and discard the rest.
  • Add the ground beef to the pan and cook until browned, breaking it apart as it cooks.
  • Drain excess grease if needed. Stir in the cooked bacon.
  • Add beef bone broth, salt, pepper, and optional seasonings if using. Simmer on low for 15–20 minutes, uncovered, allowing it to reduce and thicken.
  • Stir in butter and cream cheese (or heavy cream). Simmer another 5 minutes until fully melted and incorporated into a smooth, rich sauce.
  • Serve hot and enjoy.

Notes

Optional Garnishes:
Shredded cheese
Sour cream
Soft-boiled egg or poached egg on top
To stay strict carnivore, omit all optional seasonings except salt and pepper.
For extra richness, use 75/25 ground beef or add some beef liver or suet.

    How do you get the sauce to look like the sauce in the picture? Mine was neither thick nor red in color. The flavor was good however the picture was deceiving.

    1. That’s nice to hear you enjoyed the taste. It’s perfect for a cool day and a hearty meal. I like to use a lot of hot sauce and cayenne pepper, which usually adds a little more reddish color. Thanks for trying it and letting us know how it turned out for you.

    Looks delicious. I always have my chili in Autumn, so I will give it a try then. The number one spice to give it that traditional chili favor is Cumin, which is a common and key ingredient in chili.
