Ingredients

  • 1 pound ground beef
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon olive oil
  • 1 small yellow onion thinly sliced
  • 1 small green bell pepper thinly sliced
  • 1 small red bell pepper thinly sliced
  • ½ cup shredded provolone cheese
  • ½ cup shredded mozzarella cheese
  • 8 small flour or corn tortillas
  • 1 tablespoon butter optional, for toasting tortillas

Instructions

  • Heat a skillet over medium-high heat and add olive oil.
  • Add the sliced onion and bell peppers, cooking until soft and slightly caramelized, about 5 minutes. Remove from the skillet and set aside.
  • In the same skillet, add the ground beef, breaking it up as it cooks.
  • Season with salt, black pepper, garlic powder, and onion powder, stirring to combine.
  • Once the beef is browned, stir in Worcestershire sauce and cook for another 2 minutes.
  • Reduce heat to low and mix in the sautéed onions and peppers.
  • Sprinkle the provolone and mozzarella cheese over the beef mixture and let it melt. Stir gently to combine.
  • Warm the tortillas in a dry pan or lightly butter and toast them for extra flavor.
  • Spoon the cheesy beef mixture into each tortilla and serve immediately.

Notes

For a low-carb option, serve the filling in lettuce wraps instead of tortillas.
Swap provolone for cheddar or pepper jack if you prefer a different cheese flavor.
Add mushrooms for an extra layer of umami flavor.
Use ground chicken or turkey instead of beef for a leaner protein option.
