Ingredients
  

For the Chicken Soup:

  • 2 cups cooked chicken shredded (rotisserie chicken works great)
  • 4 cups chicken broth
  • 1 cup water
  • 1 carrot sliced
  • 1 stalk celery chopped
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

For the Dumplings:

  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup milk
  • 2 tablespoons butter melted

Instructions
 

  • In a large pot, combine chicken broth, water, carrot, celery, onion, garlic, and thyme. Bring to a boil, then reduce to a simmer for about minutes or until vegetables are tender.
  • Stir in the shredded chicken, season with salt and pepper, and let it simmer while you prepare the dumplings.
  • In a bowl, whisk together flour, baking powder, and salt. Add milk and melted butter, stirring until just combined.
  • Drop tablespoon-sized balls of the dumpling dough into the simmering soup. Ensure they are spaced apart so they can expand.
  • Cover the pot and simmer for minutes without lifting the lid to allow the dumplings to cook through and puff up.
  • Once the dumplings are cooked (they should be fluffy and no longer doughy in the center), gently stir the soup, then ladle into bowls. Serve hot.

Notes

To make the soup more hearty, add cubed potatoes or carrots. If you want to switch out the protein, beef chunks are a common way to go. Or try a white fish like halibut or tilapia for a seafood vibe.
