Ingredients
  

  • 1 pound pork belly thinly sliced
  • 1/4 cup soy sauce
  • 2 tablespoons mirin
  • 3 cloves garlic minced
  • 1 tablespoon ginger grated
  • 2 tablespoons sugar
  • 1 tablespoon sesame oil
  • 1/2 teaspoon black pepper
  • 2 green onions chopped (for garnish)
  • 1 tablespoon sesame seeds for garnish

Instructions
 

  • In a bowl, mix soy sauce, mirin, minced garlic, grated ginger, sugar, sesame oil, and black pepper to create the marinade.
  • Add the pork belly slices to the marinade, making sure each piece is well coated.
  • Let it marinate for at least 30 minutes, or for better flavor, refrigerate for up to 2 hours.
  • Preheat a grill or skillet over medium-high heat.
  • Place the marinated pork belly slices on the grill or skillet, cooking each side for about 3-4 minutes or until they are nicely charred and cooked through.
  • Garnish with chopped green onions and sesame seeds before serving.

Notes

Prep time includes marinating a minimum of 30 minutes. For a deeper flavor, marinate for up to two hours.
Food Sensitivities: For those avoiding soy, you can use 1/4 cup coconut aminos instead of soy sauce. If gluten is a concern, ensure your soy sauce is gluten-free.
Taste Preferences: For a spicier version, add 1 teaspoon of gochujang or chili flakes to the marinade. If you prefer a sweeter taste, increase the sugar to 3 tablespoons or add 1 tablespoon of honey.
