Ingredients
  

  • 12 mini tortilla scoops or cup-shaped tortilla chips
  • ½ pound ground beef
  • 1 tablespoon taco seasoning
  • 2 tablespoons water
  • ½ cup shredded cheese cheddar or Mexican blend
  • ¼ cup sour cream
  • ¼ cup diced tomatoes
  • 2 tablespoons sliced green onions
  • 2 tablespoons diced jalapeños optional
  • 2 tablespoons ranch dressing
  • 1 tablespoon chopped fresh cilantro optional

Instructions
 

  • In a skillet over medium heat, cook the ground beef until browned, breaking it up as it cooks.
  • Drain any excess grease and add taco seasoning and water, stirring until well combined.
  • Simmer for 2-3 minutes until the mixture thickens.
  • Preheat the oven to 375°F.
  • Place the mini tortilla cups on a baking sheet.
  • Spoon the seasoned beef mixture evenly into each tortilla cup.
  • Top with shredded cheese.
  • Bake for 5-7 minutes, or until the cheese is melted.
  • Remove from the oven and let cool slightly.
  • Drizzle each bite with ranch dressing.
  • Top with sour cream, diced tomatoes, green onions, and jalapeños if using.
  • Garnish with fresh cilantro if desired.
  • Serve warm and enjoy.

Notes

For a spicier version, add a few dashes of hot sauce or use pepper jack cheese.
Swap ground beef for shredded chicken or ground turkey for a different flavor.
Make them extra crunchy by lightly baking the tortilla cups before filling them.
These bites can be prepped ahead of time and assembled just before serving.
